The Skinny: A satisfying vegetarian soup perfect for mid-summer. This soup has lots of "green" flavor to it with the fresh herbs and a meaty vegetable texture. The tangy finish from Greek yogurt enhances the refreshing nature of it.
Ingredients: Green zucchini, fresh basil, fresh parsley, white wine, extra virgin olive oil, sweet onion, shallot, fresh French savory, water, Greek yogurt, ground anise seed, fennel tops (fronds), kosher salt, ground black Telicherry peppercorns
Garnish suggestions: Anything green and fresh is perfect here. Maybe some peeled, chopped cucumber. A bit of fresh basil chiffonade or some picked small leaves. The addition of some really green-tasting good young extra virgin olive oil will be lovely as well.
